One of my favorite late summer/early fall activities is putting up peppers.
We pick up our CSA share on Friday and then later, after the kids are in bed, you can often find me in the kitchen chopping and slicing red, yellow and green peppers; laying them out on cookie sheets and stacking them in our upright freezer.


A nice glass of wine, one of my favorite stations on Pandora, the steady rhythm of chopping…ahhhh…such a nice way to unwind at the end of the week.
The next day, after the peppers are frozen, I put them in plastic freezer bags (double-bagged so everything in the freezer doesn’t end up smelling like peppers) and return them to the freezer.
I LOVE how easy it is to preserve peppers and I LOVE enjoying local, organic peppers on pizza, in stir-fries, in omelets, and in veggie chili all winter long.
Not exactly a glamorous Friday night, I know, but it really works for me.

So funny – I was up till all hours last night making wontons. It takes forever (I make a lot…) but I love having a quick delicious go to meal that isn’t pizza….

yum, i never thought of peppers in the freezer! i will do that after the farmers’ market this weekend! thanks for sharing how easy it is. i blanched and chopped a bunch of tomatoes and froze. we’ll see, i usually do the whole canning process with tomatoes but no time this year.
